Macadamia white chocolate cookies

What you'll need makes 12 cookies 3/4 C macadamia nuts 1 C almond meal, blanched 1 C fine desiccated coconut 1/4 C honey or maple syrup 1/4 C cacao butter, melted 1/2 tsp baking powder 2 tbs water | How to make them Lightly toast macadamia nuts for 6-8 minutes. roughly chop then combine with almond meal and desiccated coconut. In a saucepan melt honey or amply syrup and cacao butter. In a small bowl, whisk baking soda and 1 tablespoon of water, add cacao butter and honey mixture, remove from the heat once frothed up. Add wet mixture to the dry and combine with 1 tablespoon of water. Roll into small balls and press flat on a line baking tray. Bake for 25 minutes at 120 degrees C. Allow to cool for 5 minutes before transferring onto a cooling rack before serving. |
